Originating in Valtellina, Pizzoccheri are similar in shape to Tagliatelle, measuring approximately 7 cm in length and 1 cm in width. They are made by combining two-thirds of the finest buckwheat semolina with one-third wheat semolina, following an ancient traditional recipe that gives them their characteristic dark grey colour. Traditionally, Pizzoccheri are prepared alla Valtellinese, with a sauce made from Savoy cabbage, diced potatoes, cheese, butter, garlic and sage. They also pair beautifully with rich, full-bodied sauces such as Rustichella d’Abruzzo’s Genovese Sauce and Truffle Sauce.
Ingredients: Durum wheat semolina, buckwheat flour, durum wheat semolina.
