A traditional artisanal pasta shape from the region of Puglia, Orecchiette take their name from their distinctive little-ear shape, created by pressing the dough with the thumb. The classic recipe calls for them to be prepared “alla Pugliese” with turnip greens, sausage and garlic, but they also pair beautifully with a rich, hearty meat ragù.
